Chef Yasuhiko Mitani’s Culinary Philosophy Debuts at San Sebastián

A sold-out world premiere at the 74th San Sebastián International Film Festival spotlighted the journey of sushi master Yasuhiko Mitani. The documentary, MITANI – The Mariage of Sushi, captures his transition from a legendary, four-year waiting list in Tokyo to the opening of his intimate Manhattan flagship at Lotte New York Palace.

The festival’s Culinary Zinema section hosted the film, which documents Mitani’s meticulous craft and his signature "Mitani Mariage"—a deliberate pairing of seasonal sushi with Champagne, rare wines, and sake. Following the premiere on September 23, 2026, Mitani hosted an exclusive dinner for 16 guests, translating his cinematic narrative into a multisensory experience. The momentum continued the following day at the Basque Culinary Center, where the chef engaged with culinary students, discussing his deep-seated respect for ingredients and the "relay of life" philosophy that defines his practice.

Since opening in May 2026, MITANI New York has maintained the chef's commitment to precision. The restaurant, located at 455 Madison Avenue, features two dining rooms each limited to a six-seat counter, ensuring full immersion in the dining experience. Mitani, who began his training at age 15, continues to source ingredients daily from Japan, adjusting his courses to reflect the freshness and aroma of the season. The documentary, directed by Ivan Kovac and Keita Ideno, remains a contender for the festival’s Culinary Zinema Award.
